
Joseph Halton
A graduate of the California Culinary Academy, Joseph began his hospitality career in San Francisco, where he was part of the opening teams at some of the city’s most respected properties, including the St. Regis Hotel, Mandarin Oriental, and Parallel 37 at the Ritz-Carlton. These early experiences shaped a deep understanding of refined service, operational excellence, and the kind of thoughtful hospitality that defines a truly memorable guest experience.
He later brought that foundation to the Sacramento region, contributing to standout concepts such as Ella Dining Room and Bar, The Roost, Sudwerk in Davis, and Nama Sake Sushi & Restaurant in Chico. Across each role, he developed a well-rounded perspective of restaurant operations—moving fluidly between front and back of house, and building a reputation for leadership rooted in consistency, care, and team connection.
His path into hospitality began with a single, formative moment: a reinterpretation of cassoulet made by his stepmother. That dish challenged expectations and revealed the creative possibilities within food—an early lesson that continues to inform his approach today. For him, great hospitality is both intentional and evolving, guided by experience but never limited by it.
In his role as Assistant General Manager, he brings a steady, experienced presence to the floor, along with a deep commitment to mentorship. He views it as both a responsibility and a privilege to help shape the next generation of hospitality professionals, fostering an environment where teams feel supported, challenged, and inspired to grow.
Outside of the restaurant, he is a dedicated family man and an avid baseball player, still competing in a wood-bat hardball league. He lives with his wife, Theresa, their two daughters, Charlotte and Emma, and their cat, Lavender.
