Chef Deneb Williams leads Aiona with a steady presence, a deep sense of responsibility, and a lifelong commitment to the craft of hospitality. Born and raised in the Pacific Northwest, he began working in kitchens at just 12 years old, setting the course for a career that now spans more than four decades.

Over the years, his path has taken him through kitchens across the country, shaping an approach rooted in discipline, curiosity, and respect for both ingredient and team. His cooking is guided by restraint and intention, allowing seasonality and product to speak clearly, without excess. It is a style that reflects not only technical skill, but a deep understanding of balance.

In 2007, Deneb moved to Sacramento to take the role of Executive Chef at The Firehouse Restaurant in Old Sacramento, where he spent nearly a decade refining his perspective and leadership. During his time there, he designed more than 40 wine dinners in collaboration with some of the region’s most respected wineries and was named “Best Chef” by Sacramento Magazine in 2015.

In 2016, he co-founded WM Restaurants alongside his wife and partner, Elizabeth-Rose Mandalou. Together, they have built a group of restaurants grounded in thoughtful, human-centered hospitality, beginning with Woodlake Tavern and Uptown Pizza Kitchen, followed by Allora. Over the past eight years, Allora has become a defining part of Sacramento’s dining landscape and a reflection of their shared vision.

For Deneb, restaurants have never been about the space itself, but about the people within it. That belief has shaped every environment he has built. Known for his calm demeanor, humility, and ability to navigate pressure with clarity, he has cultivated a kitchen culture rooted in respect, curiosity, and trust. He sees his role not only as a chef, but as a teacher and mentor, finding the greatest sense of accomplishment in watching those around him grow, succeed, and take pride in their work.

That sense of responsibility became even more evident during the challenges of the pandemic, when his focus remained on supporting his team, his community, and the farmers and purveyors his kitchens rely on. Through uncertainty, his leadership remained steady and people-centered, reinforcing the values that continue to define his work.

Aiona represents the realization of a long-held vision. It brings together years of experience, relationships, and inspiration into something deeply personal. For Deneb, it is not simply the opening of a restaurant, but a continuation of what has always mattered most: creating meaningful experiences, building strong teams, and contributing to a community through food and hospitality.
